Coming from the small town in Northern Italy called Recco, Focaccia di Recco is a rare type of focaccia that is sold on the streets. Unlike the regular focaccia bread, Di Recco is a filling dish with crispy and thin texture with a bubbly, cheesy interior. Legendary Chef Nancy Silverton first introduced this comfy dish to American food enthusiasts and her proud apprentice Chef Cihan created Glad and further evolved the recipe with delicious fillings and fresh toppings. He turned it into an unexpected fusion of traditional Italian and Eastern European cuisines that you haven’t had a chance to taste before.
