Offering about 12,000 square feet of exhibition space in a converted industrial warehouse, Faurschou New York, is located in the Greenpoint neighborhood of Brooklyn. The Faurschou Foundation was established in 2011 by Mr. Faurschou after decades as gallery owner focusing on international contemporary art. Faurschou New York and Chef Refslund represent a perfect partnership, as they compliment each other’s stunning collections of inspirations.
Terroir represents the sum of natural forces: soil condition, sun, wind, and rain. When we eat food that expresses terroir, we feel connected to a particular area of land and sea, and its unique characteristics, and by extension, to the people that live there, their struggles and sensibilities. Thus, Chef Refslund’s menus feature a naturalistic and hyper seasonal cuisine, with a clearly defined focus on vegetables indigenous to the region, seasonal bounty and honoring the Earth’s cycles.
