We have professional bartenders and servers that will do all the work. My clients provide their food and liquor and it is a lot less expensive. We arrive one hour before ceremony for set up. We set-up the buffet, portion control on the buffet line, replenish and most of all keep everything clean throughout the reception or party. We always have 1 server and 1 bartender for parties under 75 guests, using nice plastic plates. When client is using china and glassware we always need more servers for the event.
